De Simone Vineyards is a winery located in the heart of the Niagara Wine Country. We are proud members of the VQA and Grape Growers of Ontario. When it comes to the vineyard, we focus 100% on quality. All the grapes used to make our wine are hand picked from our vineyard only. This classifies all of our wines as Reserve and Estate. We choose to only use our grapes because we do not use herbicide in our vineyard, this is something we are extremely proud of and makes our winery stand out. Instead of using herbicide we use a method we call “hilling up and down”to eliminate the weeds. We choose to follow traditional methods with new techniques. Our 10 acre vineyard consists of 6 different varieties; Chardonnay, Riesling, Vidal Blanc, Merlot, Cabernet Franc and Cabernet Sauvignon.
We limit the use of machinery in our vineyard and choose to hand-pick all of our grapes. Virtually everything is done by our hands, the picking, pruning, tying, leaf plucking, shoot thinning, cluster thinning and even planting. We believe this is where the quality stands in our vineyard. Our Winemaker is also the Vineyard Manager, we feel we have complete and total control from the vineyard into each bottle of wine. We strive to let the grapes hang on the vines for as long as possible to develop the most complex and unique wines. The flavour, terrior and quality stands out, we continue to surpass ourselves each and every vintage.
